The whole story

1. Maya stirred the pot in the Jamaican kitchen. The lid was still closed, but a spicy smell had already escaped.

2. Maya sniffed the spoon. “Is it the pepper?” she asked. Grandma smiled. “The pepper is only one part.”

3. Maya added thyme, scallions, garlic, and ginger. The herbs made the smell green and fresh.

4. Grandma showed Maya a Scotch bonnet pepper. Maya kept her hands behind her back. “That little one has a big voice,” Grandma said.

5. Then came allspice, paprika, and black pepper. Maya leaned closer. The seasoning smelled warm, smoky, and bold.

6. Maya stirred until the spices became a thick paste. She wanted to taste it right away.

7. Maya lifted the spoon. Grandma raised one finger. “Not yet,” she said. “Jerk needs time to listen to itself.”

8. Maya waited while the paste rested on the chicken. The smell grew deeper. Waiting was harder than stirring.

9. At last, Grandma placed the chicken over the coals. Smoke curled around the herbs and spices. Maya’s stomach made a tiny drumbeat.

10. Before the lid opened, the spicy smell escaped again. It slipped under the lid, around the pot, and straight into Maya’s nose.

11. Maya tasted a tiny bite. First came heat. Then herbs, smoke, sweetness, and a deep, savory flavor.
