Why Does Bread Puff Up Like a Pillow?

Bread rises because yeast makes tiny bubbles of gas that stretch the dough while it rests and bakes.

The whole story

1. At sunrise, Mina stood at the kitchen table with an empty bowl. “Today, I will bake bread as soft and round as a pillow.”

2. Mina measured flour, salt, warm water, and a little yeast. She stirred until the ingredients became one shaggy ball.

3. Mina folded the dough and pressed it down. She folded it again and pressed harder. The dough stayed low and lumpy.

4. Mina covered the dough and waited. When she peeked underneath, it was still as flat as a pancake. “Where is my pillow?”

5. Mina checked the yeast in warm water. Tiny bubbles gathered on top. “Aha,” she said. “Something is happening.”

6. After a long, quiet rest, Mina lifted the cloth. The dough had puffed into a plump mound. It looked ready for a pillow fight.

7. The oven browned the loaf and made the kitchen smell wonderful. Mina pressed the warm crust, then peeked inside. Little holes filled the soft crumb.

8. So why does bread puff up like a pillow? Bread rises because yeast makes tiny bubbles of gas that stretch the dough while it rests and bakes.
